Fall marks the beginning of  “Soup Season” for many. This recipe is super easy and is the ultimate definition of comfort food!


Crockpot Loaded Baked Potato Soup

  • 5 pounds of russet potatoes
  • 1 medium yellow onion, diced
  • 5 Tbs. minced garlic
  • 8 cups of chicken broth
  • 16 oz. cream cheese, softened
  • 1 Tbs. salt
  • black pepper to taste
  • garnish: green onions, shredded cheese, and diced bacon

Dice russet potatoes and place in 7 qt. casserole dish. Add onion, garlic, seasoning and chicken broth. Cover and Cook on High for 6 hours.

*Stir in the 16 oz. of Cream Cheese into crock pot just before serving.

Garnish with Shredded Cheese, Green Onions and Bacon. ENJOY!
